One of the most well-known nutrients in tomatoes is lycopene — the compound that gives tomato its deep red colour.
Research has shown Lycopene to have anti-cancerous activity as well as maybe reducing your risk of stroke.
Choose organic varieties, whether whole tomatoes or tomato paste, tomato sauce, or pasta sauce. Organic tomato sauce has been found to contain 57 percent more lycopene than conventional brands.
The cooking of the tomatoes not only increases the lycopene content that can be absorbed by your body, but it also increases the total antioxidant activity.
Consume your tomatoes, whether raw or cooked, with some type of fat, such as olive oil, since lycopene is a fat-soluble nutrient.
Avoid anything that comes in a can, since the acidity of the tomatoes will increase toxic BPA release from the liner.
I am yet to find a can of organic tomatoes that doesn't have BPA lining! If you know of a brand I would be only too pleased to hear about it!
